- Separate kailan stalks from leaves. Slice stalks thinly and cut leaves into 4cm lengths. Blanch kailan stalks and carrots for 2 minutes, then add leaves and blanch for a further minute. Drain and set aside.
- Heat oil in a roomy wok and fry garlic till golden brown. Add chicken and stir-fry till firm, before adding mushrooms. Cook for 5 minutes, adding blanched vegetables, Kimball Spaghetti and half the Mixture A.
- Stir-fry, add remaining of Mixture A. Ensure that all is well mixed and heated through.
- Transfer onto serving dish, sprinkle chillies and fried shallots, and serve immediately.
