Ingredients

  • 600g fish steaks*, cleaned
  • ⅓ cup Kimball BBQ Sauce
  • Banana leaf for wrapping
  • 3 tbsp cooking oil

  • Mixture A (Mix well)
  • ⅓ cup Kimball Bijan 3 Rasa Sauce
  • ⅓ cup tamarind extract
  • 3 shallots, sliced
  • 3 bird chillies, sliced
  • 3 kaffir lime leaves, finely sliced
  • Salt to taste

  • *stingray, black pomfret or red snapper

METHOD

  1. Pat fish dry and marinade with Kimball BBQ Sauce. Wrap fish in banana leaf and secure with toothpicks.
  2. Brush packets with oil, place on frying pan and cook on low heat for 12 minutes per side.
  3. Serve fish with Mixture A.
