TAMBAH DRAMA RECIPES | KIMBALL ANGEL HAIR SOTO BIJAN 3 RASA STYLE

Ingredients

  • ½ chicken without skin, cut into 2
  • 3 tbsp cooking oil
  • 240ml Kimball Bijan 3 Rasa Sauce
  • 2 tbsp Kimball Oyster Flavoured Sauce
  • Salt to taste
  • 300g Kimball Angel Hair, cook according to instructions on the packet

  • Ingredient A (Pound into fine paste)
  • 1½ tsp white peppercorns
  • 5 cloves garlic
  • 3cm ginger
  • 2cm turmeric root
  • 1 tbsp coriander seeds
  • 2 tsp salt

  • Ingredient B
  • 2.5 litres chicken stock
  • 3 stalks lemongrass, bruised
  • 4 large kaffir lime leaves, torn

  • Ingredient C
  • 4 hard-boiled eggs, cut into quarters
  • 1 cup lettuce, shredded
  • ½ cup spring onion, sliced
  • ½ cup celery leaves, sliced
  • ½ cup fried shallots

METHOD

  1. Rub marinade Ingredient A all over chicken, set aside 15 minutes. Heat oil in a large pan and fry chicken on both sides over low heat until browned. Add Ingredient B, bring to the boil and simmer on low heat for 15 minutes.
  2. Add Kimball Bijan 3 Rasa Sauce, Kimball Oyster Flavoured Sauce and simmer for 15 minutes. Season with salt to taste.
  3. Remove chicken from the soup and leave to cool. Remove bones, tear chicken into coarse shreds and set aside.
  4. Serve hot soup in individual bowls with Kimball Angel Hair pasta and garnish with Ingredient C and shredded chicken.
