Ingredients
- 200g Chicken Breast
- 2 Tbsp Oil
- 2 Tbsp Kapitan Curry Paste
- 1 Can Kimball Basil & Garlic Pasta Sauce
- 30 ml Coconut Milk
- 200 ml Water (Adjust For Sauce Thickness)
- 1 Stalk Lemongrass – Bruised
- 1 Tsp Tamarind Juice
- 200g Kimball Spaghetti Pasta, Cook As Per Packet Instructions
- 1 Sprig Of Fresh Basil Leaves
- Salt & Sugar To Taste

Method
- Heat the oil and add the chicken. Sauté briefly until the chicken changes colour.
- Add the kapitan curry paste and lemongrass, then stir until fragrant.
- Add the Kimball Basil & Garlic Pasta Sauce and mix well.
- Pour in the coconut milk and water, then simmer until the sauce becomes thick and creamy. Add tamarind juice, salt and sugar. Adjust seasoning to taste.
- Serve the Kimball Spaghetti Pasta in a bowl and pour the kapitan curry sauce over it. Finish with fresh basil leaves as garnish.
