Ingredients
- 500g basmathi rice, soaked 20 mins & drained
- 4 tbsp ghee
- 1 onion, diced
- 2cm ginger, sliced
- 5cm cinnamon stick
- 2 star anise
- 4 cardamoms
- 4 tbsp Kimball Tomato Puree
- 425ml Kimball Tomato Soup
- 500ml water salt, to taste
- For Garnishing
- Roasted cashew nuts
- Crispy-fried shallot
- Coriander leaves
Method
- Heat ghee, sauté onion, ginger, cinnamon stick, star anise and cardamoms until fragrant.
- Add rice, stir for 1 minute. Mix in Kimball Tomato Puree, Kimball Tomato Soup, water and salt.
- When the rice is cooked, garnish with ingredients for garnishing and serve.
